Mother’s Day has come to pass but haven’t we said “Everyday is Mother’s Day” oftentimes? Yes, we celebrate Mother’s Day with our moms daily by hugs, kisses, messages and prayers.

Since we celebrate Mother’s Day during summer when our favorite sweet mangoes are in season, we can treat our moms (and ourselves too) with Krispy Kreme Mango Kreme Cake. Krispy Kreme Mango Kreme Cake is made of bits of ripe mangoes mixed with custard on top of a soft vanilla cake and is available on a limited time at PhP42.00 each.

Drive away the heat by having Krispy Kreme Mangoes & Kreme Chiller. For a medium sized serving good for sharing, Mangoes and Kreme Chiller has mangoes and topped with whipped cream.

Confetti

Confetti falling from the roof adds up to the excitement of events and gatherings, especially during ceremonial toasts, congratulatory portion and awarding of grand prizes.

Of course, this could be a bit of a problem during toasts.

When we went to the opening ceremony of the recently concluded Manila International Auto Show, some of the confetti from the roof looked like loose diamonds, according to my daughter who was watching from a distance.

Well, if that’s the case, I would be the first to catch a few 😀

Shrimp and Citrus Salad with Sesame Dressing

Shrimp and Citrus Salad with Sesame Dressing prepared during February’s Dona Elena Cuisinera Club monthly cooking classes.

Ingredients:

  • 500 g shrimps
  • pinch of salt
  • 2 T Dona Elena pure olive oil
  • 1pc pomelo, peeled and sectioned
  • 1pc Sunkist orange, peeled and sectioned
  • 1 cup jicama (turnips), sliced thinly
  • 1 cup carrots, sliced thinly
  • 1 head, lettuce or assorted greens, chopped

For the sesame dressing:

  • 50 grams, white sesame seeds, toasted
  • 1/2 cup vinegar
  • 25 grams onions, chopped
  • 3/4 cup honey
  • 1/4 cup sesame oil
  • 1 1/4 cup Dona Elena Extra Virgin Olive Oil
  • to taste, salt and pepper

Smoked Bangus Paté

Several mom blogger friends and I were invited to the SM Hypermarket Super Chefs cooking demo by Caren.

Below was one of the three recipes she demonstrated: Smoked Bangus Paté

Ingredients:

  • medium-sized smoked bangus fillet, flaked and fried in olive oil
  • 1 box of cream cheese
  • half-cup all-purpose cream
  • 2 tbsp lemon juice
  • salt and pepper to taste

Procedure:

In a blender, put one piece of medium-sized smoked bangus fillet (minus the head, tail and bones), cream cheese, all-purpose cream, lemon juice and salt and pepper. Pulse until smooth and creamy.

Serve in individual containers with toasted bread or your favorite chips.

To those who have been reading phentermine reviews and want to diet, try substituting light all-purpose cream and light cream cheese. Lessen salt too since the smoked bangus is a bit salty already. Plus use baked chips instead of fried ones.

Vegetarian Crepe with Tomato-Basil Sauce

Here is another dish from the Dona Elena Cuisinera Club prepared last month: Vegetarian Crepe with Tomato-Basil Sauce

Ingredients for Crepe:

  • 3 pcs eggs (or1 whole egg and 3 egg whites)
  • 1 cup flour
  • 1 1/4 cup fresh milk (or low fat milk)
  • 1/4 cup butter (or reduce to 3 tbsp)
  • a pinch of salt

Procedure:

  1. Beat the eggs.
  2. Add milk and butter
  3. Sift flour and salt then gradually add to the egg mixture
  4. Mix until batter is smooth. Batter should be thin (like heavy cream)
  5. let the batter rest at least two hours before using
