Self-Control

Writing about food like the Squash, Tomato and Basil Soup, Pumpkin and Sausage Pasta, and the Mango Cheese Muffins makes me feel like I have added a few more pounds to the pounds I should have shed a long time ago, LOL.

So there, I admit, I am looking at this site: www.abworkouts.net for a friend AND for me. Maybe this will work for me while I blog and watch the latest episodes of the my favorite tv series online. No excuses not to do anything about this excess poundage and bulge.

So yeah, I really, really need to do something about it. No more excuses. And what? Christmas season is already here so I have to take those fortitude and self-control pills. If only if these were available OTC.

Vote For Your Town, Vote for Iba Zambales

Mango Cheese Muffins from Iba, Zambales, an entry for Kraft Eden Cheese World’s Longest Christmas Celebration with a Cheesy Twist. This contest features 100 unique cheese-based specialties of 100 towns nationwide to celebrate 100 Days of Christmas.

Iba, (my hometown, yipee! ) is the birthplace of the late President Ramon Magsaysay. The town has several kilometers of clean gray sandy beach and lovely sunset views.

People from Iba, Zambales are wonderful and I say that not because I am from the place but because it is true. We are sweet too, as sweet as the luscious mangoes that delight people who have tasted these. Iba, Zambales has a long stretch of sea that has a wide array of fresh catch, rice fields, and rolling majestic mountain range and yes (one more time), the sweetest mangoes you have ever tasted.

Squash, Tomato and Basil Soup

The weather is getting cooler which means we are nearing the Christmas season and which also means we are craving for a warm bowl of soup to drive away the chill. But before we celebrate Christmas however, we (sort of) celebrate Halloween first.

Instead of the usual orange colored food served during parties, what about serving this nutritious squash, tomato and basil soup prepared by Chef Golda Liamzon for Dona Elena Cuisinera Club September cooking demo.

This can be prepared with the Squash and Sausage Pasta since squash comes in big sizes, so why wait for another opportunity to use the other half when you can prepare both at the same time?

Dona Elena Pumpkin Soup

I already did this soup a few days after the cooking demo. And ack! I forgot to take photos.

The kids loved it and even had second servings. They used it as “sabaw” for their rice. I used a glass of “thick” full cream milk instead of the all-purpose cream because I was saving the APC for another dish.

Pumpkin and Sausage Pasta

Chef Golda Liamzon of the Dona Elena Cuisinera Club whipped up another yummy and nutritious food just perfect to serve for Halloween parties because the end result has yellow-y sauce: Squash Pumpkin and Sausage Pasta. FYI, Squash was used instead of pumpkin.

Dona Elena Sausage Pasta

Squash is rich in carotene and the richer the color, the more concentration there is in the nutrients. Squash is also a good source of folic acid, fiber, vitamins B1 and C.
