2016 Maya Kitchen Summer Classes

The Maya Kitchen Culinary Center offers the following courses for children, teens, coffee lovers, bakers and chefs:

Maya Kitchen’s Kids Magical Adventure is on May 3-6, Tuesday to Friday, 9am-1pm Themes include ‘Circus,’ ‘Star Wars’ ‘Pixar Party’ and ‘Let It Go.’ Class fee is P6,000.
Young Foodie Hangout features ‘Instagrammables’ for Instagram-worthy recipes and plating; ‘One-Two-Three Kitchen’ for basic kitchen knowledge while “Eat In What You Eat Out” includes recipes inspired by famous fast food joints and restaurants. Class schedules are May 10-13, Tuesday to Friday, 9am-1pm. Fee is P7,000.
Coffee 101 is on May 7, Saturday, 1-5pm. Get an insider’s look at the various techniques in steaming, frothing and foaming of milk. Learn machine techniques in drink making and find out more about freestyle and etching in Coffee Latte Arts. Class fee is P999.
Coffee 102 is on May 14, Saturday, 1-5pm. Create delectable drinks like a professional barista with lectures on Choosing the Right Coffee, Coffee Latte Arts Part 2, Cold Coffee Concoctions, Equipment Maintenance and Creating Your Own Signature Drink. Class fee is P999.
Basic Culinary is on May 17-20, Tuesday to Friday (9am-3pm) and May 31-June 3, Tuesday to Friday (9am-3pm). Learn Cooking Fundamentals and International Standard Techniques of meal preparation from soup, salad, pasta, main courses to desserts for Home and Institutional Scale Kitchens with workshop. Class fee is P8,000.


Basic Baking
is on May 24-27, Tuesday to Thursday (9am-2pm). Learn Basic Baking Techniques applicable to small and commercial scale production of recipes and formulations of quick breads, pies, cookies, cakes and other bread varieties with workshop. Class fee is P7,000.
Commercial Breads is on May 28, Saturday (9am-1pm). This hands-on class teaches recipes for Kopi Roti Buns, Ensaymada, Cinnamon Rolls and Oatmeal Bread. Class fee is P1,499.

‘European Cooking Made Easy’ at The Maya Kitchen

Learn how you can prepare select European dishes as rising culinary gem Chef Cara Davis mounts a cooking demonstration at The Maya Kitchen on October 25, Saturday, 9am-1pm.

Chef Cara will share the following recipes:

  • Salmorejo Soup, an Andalusian version of gazpacho made by blending tomatoes, garlic and day old bread. The soup is then garnished with crispy Jamon Serrano and hard boiled eggs.
  • Chicken Fines Herb is sautéed chicken breast paired with a rich and creamy sauce made by adding wine and jus lie to sweated shallots. Cream and finely chopped chives, tarragon, parsley and chervil finish off this classic French dish.
  • Cavatelli is fresh, handmade pasta tossed with a pesto of pistachios, parmesan cheese, herbs and roasted tomatoes.
  • St. Peter’s Fish is pan seared Tilapia finished with a beurre blanc sauce made by whisking chilled butter to a white wine and vinegar reduction.
  • Peach Galette is a basic crust made of butter and flour, rolled out and filled with peaches flavored with cinnamon and vanilla.

Chef Cara got her culinary training from the following institution:

  • Culinary Institute of America, Hyde Park, New York,
  • French Culinary Institute in Manhattan
  • New York Bartending School

Starting at the age of fifteen, chef Kara worked at Kultura and C5 at The Royal Ontario Museum in Toronto, Canada.

She has also worked as a chef de partie with Chef Grant Achatz at Alinea in Chicago, Chef Daniel Humm at Eleven Madison Park in New York and most recently with Chefs Juan Marie and Elena Arzak at Restaurante Arzak in San Sebastian, Spain.

11 year-old Chef Cara became the youngest student to attend Basic Cooking, Basic Baking and Cake Decoration classes at The Maya Kitchen.

The young chef also does private catering.  She is involved in charitable works, having worked as a volunteer cook for a Toronto women’s shelter and a New York soup kitchen.

Chef Cara is based abroad and is in the Philippines only for a visit.

Ilustrado Restaurant “Breaking Bread with our Heroes” at The Maya Kitchen

Ilustrado, the home of heritage Filipino-Spanish cuisine shares well loved dishes from our heroes’ hometowns at The Maya Kitchen, 9am-1pm on October 26, Saturday with Boni Pimentel, Ilustrado president and his chefs taking center stage.

Recipes include

  • Umbuyan, tinapa flakes sautéed in olive oil and wrapped in pechay leaves has its origins in Manila where Andres Bonifacio was born.
  • Bagnet with KBL Sauce is an Ilocano version of lechon kawali with kamatis, bagoong and lasuna as sauce where Juan Luna and Antonio Luna are the proud sons of Ilocos Norte.
  • Manok ng mga Bayani, chicken simmered in bold textures of dill, kamias, ground peanuts and toasted rice is inspired by no less than President Manuel Luis Quezon who hailed from Baler, Aurora.
  • National hero Jose Rizal from Biñan, Laguna inspired Jaleang Bayabas, very ripe guavas peeled and mashed in milk and sugar.
  • Rounding off the recipe line-up is Paella Ilustrado, Spanish rice dish with pork, chicken, seafood, chorizo bilbao, peppers and peas which is a consistent bestseller in the restaurant menu.

Ilustrado is located at 744 General Luna Street, Intramuros, Manila opened its doors in 1989. Through the years it has expanded all over the metro and has also made a name in catering for clients such as Malacañang Palace and other government agencies, foreign embassies, multinational corporations, local businesses and prominent personalities. It is also a favorite wedding reception venue due in part to its proximity to some of Manila’s historic churches.

‘No Borders Cuisine’ at The Maya Kitchen

The Maya Kitchen presents the ‘No Borders Cuisine’ of guest chef Vicky Pacheco, Chateau 1771 Group of Restaurants’ Executive Chef and Chief Operating Officer on August 31, Saturday, 9am-1pm.

Chateau 1771 Group of Restaurants is composed of Chateau, Café, Sentro, WineBar, SideBar and 1771 El Pueblo.

Chef Vicky will demonstrate a signature dish from each of the restaurant concept in the group.

  • Lemon Chicken is crisp fried organic chicken leg nuggets coated with honey-lemon sauce from Chateau;
  • Salbacho Pizza, a Sidebar staple, is topped with salami, bacon and chorizo;
  • Fresh Smoked Fish Spring Rolls from Sentro is a fresh lumpia of tinapang bangus, salted egg, mustasa, onions and tomato;
  • WineBar’s Lacquered Salmon is grilled salmon steak with soy sauce and honey reduction, mashed potatoes with parmesan cheese
  • Café’s Bread & Butter Pudding is brioche type bread baked in a luscious custard with butter and real vanilla bean.

The first Chateau 1771 opened its doors in Malate in 1988 and has since relocated to its present location in Greenbelt 5. Its patented “No Borders  Cuisine” is a blend of well-loved Swiss, Italian and French creations.

Café 1771 in Ortigas is a beautiful dining destination serving truly unique sandwiches, breakfast, lasagna, stews, pizza and dessert.

WB 1771 is the group’s Wine Bar concept with a wine selection from 11 countries and 48 regions while SideBar is the perfect place to unwind with great food and wine.

The group has not entirely left behind the Filipino palate with its trailblazing Sentro 1771 restaurant concept. It made famous sinigang na corned beef, rated GG and more.  The people behind it describe themselves as ‘living, breathing and dreaming’ Filipino food.

Chef Vicky first joined Chateau 1771 as Assistant Restaurant Manager in December 1988 and has since occupied several positions as Restaurant Manager, Executive Chef and Food and Beverage Manager.

She graduated with a Bachelor of Science in Hotel and Restaurant Administration from the University of the Philippines then got a Food and Beverage Diploma at the Les Roches, in Bluche-Montana, Switzerland.

Mabuhay Palace Chinese Feast at The Maya Kitchen

The Maya Kitchen presents the chefs of Manila Hotel’s Mabuhay Palace on July 27, 2013.

Executive Chinese Chef Sun Bing and Chinese Operations Manager/Executive Chinese Sous Chef Josephine Yu Tanganco-Candelaria will demonstrate the following recipes:

  • Vegetarian ‘Peking Duck
  • Shrimp Laced with Almonds
  • Anchovies with Water Chestnuts Fried Rice
  • Stir Fried Chicken Glazed with Soya Sauce
  • West Lake Fish Soup
  • Chinese Red Bean Pancake

Chef Sun Bing

Chef Sun Bing graduated from Beijing Culinary School and joined the Beijing Hotel after graduation.  He came to the Philippines in 1988 and for over 20 years has been delighting local diners at the Aloha Hotel, Mandarin Oriental Hotel and The Manila Hotel.

Chef Josephine Yu Tanganco – Candelaria

Chef Tanganco-Candelaria has been with Manila Hotel since 2009. She was previously with Mandarin Oriental Hotel and intercontinental Manila.

Chef J Gamboa Cooks Thai at The Maya Kitchen May 25, 2013

On May 25, Saturday, 10am-1pm  renowned Chef J. Gamboa of Cirkulo Restaurant takes on Thai cuisine as guest chef of The Maya Kitchen.

Chef J. Gamboa will be joined by Chef Malichat of Azuthai Restaurant.
Cirkulo and Azuthai are parts of a chain of restaurants that includes Milky Way at Rockwell Power Plant and V-Mall Greenhills;  Azuthai, Tsukiji and Milky Way Café all at the Milky Way Building, 900 Arnaiz Avenue corner Paseo de Roxas, Makati.
The two chefs will demonstrate these popular Thai dishes:
  • Tom Yum Goong (Hot and Sour Prawn Soup with Lemongrass, Kaffir Lime Leaves and Fresh Coriander);
  • Goong Pad Prik Kratiem (Chili Garlic Prawns);
  • Geng Kew Wan Gai (Green Chicken Curry);
  • Pla Naeng Ma Naw (Steamed Apahap with Lime, Fish Sauce Garlic, Coriander and Chili)
  • Khao Niao Ma Muang (Mango with Sticky Rice).
Chef J. Gamboa belongs to a family of restaurateurs led by Malu A. Gamboa who runs the restaurant chain.  He is a graduate of the University of Massachusetts at Amherst and the Culinary Institute of America, Hyde Park, New York.  He is Executive Chef of his family-owned restaurants Cirkulo, MilkyWay, Tsukiji and Azuthai.
Chef Malichat is a native of Nakhon Sawan, Thailand and has worked in 5-star hotels in Germany, China, Pakistan, Ukraine and in Thailand for over 20 years.
