Potato Salad

Lasang Pinoy Sundays for this week is all about Noche Buena.

Noche Buena is that midnight feast meal which families share to celebrate Christmas. These can be a table full of elaborately-prepared dishes or just simple meals that best reflect what each and every member of the family wants to share or to have.

We have had a simple Noche Buena. Pasta carbonara, baked ham, macaroni salad for the kids and my hubby and potato salad for me. We were going to have lunch in my hubby’s aunt the next day so I dd not cook a lot.

What I did (the salad) was just for me to have during the Noche Buena and breakfast. Or so I thought.

Who would have thought that they (hubby and the kids) wanted the potato salad better than the macaroni salad?

Ingredients:

potato marbles, boiled and cut into two ( i was not supposed to peel these but decided to do so)

boiled chicken fillet, cut into small pieces

(less fat) Miracle Whip (tantiyahan lang but I think I put more than I would have wanted to)

1 pc carrot (boiled for a minute or two to soften a bit), boiled and cut into small cubes

celery, chopped into small pieces

half an apple, cut into small pieces

cheddar cheese slices, cut into small cubes

2 T of pickle relish

Just mix together and adjust the taste by adding whatever suits your taste. Would have added boiled eggs but I needed the eggs for the brownies for giveaways that I still had to bake then.

Now, I am more prepared. I got two packs of these potato marbles for my Medya Noche.

    i’m not very fond of potato salad…i don’t know why. but i love chicken macaroni salad especially with lots of onions, celery and pickle relish. yummm!

    haha! as a kid i’d also go for the mac salad, but now i prefer potato too!:) simple but well prepared i must say TJ!) Have a Wonderful New Year ahead!:)
